c.a.k.e p.o.p.s.

With my dear boyfriend 1177.66 miles away attending NEXT 2011, I have had a little more time to myself this weekend. This is neither good nor bad, I should add, because although I do miss him [kind of a lot] I have also enjoyed the more low-key weekend around the house. I have spent time with my sister, cleaned a ton [seriously, I love cleaning], and also spent a little time in the kitchen. I love blogs, obviously, and I have been intregued with Bakerella's cake pops from day #1. With a little extra free-time on my hands, and the fact that I practically ran into the ingredients while browsing Factory Card Outlet with my sister, I found that last night was the perfect time to try my hand at cake pop making. They may not hold a candle to Bakerella's, but that doesn't mean they're half-bad, either.

They do take kind of awhile to make, but for a special occasion, they're certainly worth it! First you bake a cake. Just a normal cake from a box. Once the cake is baked and cooled, you pop it into your mixer and crumble it. Next you add 3/4 a can of frosting and mix. Once the whole cake is crumbled and moist from the frosting, you use your hands to roll the mixture into 1 1/2 inch cake balls. Deposit them into the freezer for about 15 minutes to harden.

While they were in the freezer hardening, I got the candy melts ready. It only took about a minute in 50% power in the microwave to completely melt the candy pieces.

The final steps were quite easy. I just dipped the sticks into the melted candy before pushing them into the cake balls, and then refroze for about one minute to harden the candy which was now holding the lollipop sticks in place.
After that I just dipped them into the melted candy, splashed a couple green sprinkles onto them and voilĂ !

I think they are simple precious, and decadently delicious, too.
